CHECK that ALL ingredients bear the Soy-Free label Cook the white beans in unsalted water until very tender (30 min) Cut the leek (tender part only) into regular 1.5 cm cubes, wash well Cook the quinoa in unsalted water (12 min) Mash the banana with a fork (ripe for natural sweetness) Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Steamer pot Do NOT buy a product without reading the label Do not cut too large: choking hazard Remove tough green part of leek Always wash leek well (sand between layers) Do not add salt: baby's immature kidneys NEVER serve a product that may contain hidden soy Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: leek should be melting-tender KEEP PACKAGING of sensitive products to prove soy-free Check LABELS even for 'obvious' products (e.g. canned beans sometimes contain soy additives) Take out 30 min before for better incorporation 2
Mash the cooked beans in a large bowl Add the leek mashed into a smooth purée Fold in the cooked quinoa and mashed banana Add the binder (apple compote) Pour in the olive oil and thyme Mix with a wooden spoon Adjust the texture (rice flour if too sticky) Shape the wraps with oiled hands Place on a tray 3
Preheat the oven to 180°C fan Lightly oil a baking sheet Arrange the wraps leaving 2 cm between each Bake in the middle of the oven for 15 min Check cooking halfway through Remove when wraps are golden Let cool 3-4 min Test the temp with a finger: warm Serve immediately 4
Prepare a fresh banana slice garnish Arrange the warm wraps on baby's plate Add small banana pieces around Show how to pick up the wraps Serve warm Watch baby during the meal Monitor allergy signs (rash, swelling) Put leftovers in the fridge Baby plate Small bowl + suction cup Large bowl

Do not overmix: elastic dough Do not add too much flour: shapes become too dense Do not forget to shape flat for wraps Do not make wraps too big: max 6 cm Do not leave air in the dough Check that utensils have not been in contact with soy If the dough is too sticky: add 1 tsp rice flour If too dry: add 1 tsp liquid (water or adapted milk) Shape with damp hands: the shapes won't stick Make small flat wrap shapes Vary sizes according to age For 24-36 months: bigger wraps Baking sheet

Timer
Do not forget to preheat Do not overcrowd the sheet Do not open the oven in the first 8 min Do not overcook: becomes hard and dry Do not use too high heat Do not unmould too hot: burns Check cooking: fork comes out clean For 12-18 months: more moist cooking For 24-36 months: more golden cooking If browning too fast: lower to 160°C Test with a toothpick: should come out clean Remove when shapes come off easily Spoon
