CHECK that ALL ingredients bear the Mustard-Free label Rinse the quinoa and cook it in water (15 min) Cut the red bell pepper into small cubes (1.5 cm) - remove seeds Cook the rice pasta in water (8-10 min) then drain and cool Remove the pomegranate seeds and set aside
Wash and finely chop the chives
Take all ingredients out 20 min before (room temperature)
Prepare equipment: bowl, cutting board, knife, air fryer Cutting board Paring knife Kitchen scale Mixing bowl Tartelette moulds Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not leave pepper seeds or white pith Do not give whole pomegranate seeds to under 24 months Do not add salt: baby's immature kidneys ⚠️ NEVER serve a product that may contain hidden mustard Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: should be melting-tender KEEP PACKAGING of sensitive products to prove mustard-free Check LABELS even for 'obvious' products (e.g. rice pasta sometimes contains mustard derivatives) Take out 30 min before for better incorporation 2
Put the cooked quinoa in a large bowl Add the red bell pepper mashed into a smooth purée Fold in the cooked rice pasta and pomegranate seeds Add the binder (egg) Pour in the olive oil and half of the chives Mix with a wooden spoon Adjust the texture (rice flour if too sticky) Press into oiled tartelette moulds Place on a tray Large bowl Wooden spoon Fork Clean hands Tartelette moulds Do not overmix: elastic dough Do not add too much flour: shapes become too dense Do not forget to press tightly: otherwise it crumbles Do not make shapes too big: max 5 cm Do not leave air in the dough ⚠️ Check that utensils have not been in contact with mustard If the dough is too sticky: add 1 tsp rice flour If too dry: add 1 tsp liquid (water or adapted milk) Press with damp fingers: shapes won't stick Make small holes in the base with a fork Vary sizes according to age For 24-36 months: bigger tartelettes 3
Preheat the air fryer to 170°C Arrange the moulds in the basket Leave space around the moulds for air circulation Cook for 12 min Check cooking halfway through Remove when tartelettes are golden Let cool 5-6 min before unmoulding Test the temp with a finger: warm Unmould carefully Air fryer Tongs Fork Tongs Timer Do not forget to preheat Do not overcrowd the basket Do not open the air fryer in the first 6 min Do not overcook: becomes hard and dry Do not use too high heat Do not unmould too hot: burns Check cooking: fork comes out clean For 12-18 months: lower temperature, longer time For 24-36 months: higher temperature, shorter time If browning too fast: lower to 160°C Test with a toothpick: should come out clean Remove when tartelettes come off easily 4
Prepare a fresh pomegranate seed garnish Arrange the warm tartelettes on baby's plate Sprinkle a few pomegranate seeds around Show how to pick up the tartelettes Serve warm Watch baby during the meal Monitor allergy signs (rash, swelling) Put leftovers in the fridge Baby plate Small bowl + suction cup Spoon Non-slip cloth Phone (emergency) Do not serve burning hot Always remove pomegranate seeds from membrane Do not leave baby alone Do not put too many pomegranate seeds Do not reheat several times ⚠️ NEVER add an ingredient with hidden mustard Serve warm: flavors are more developed Pomegranate seeds add color and vitamin C For 12-18 months: cut in half lengthwise Silicone bowl with suction cup Offer 2-3 different sides Keep phone nearby in case of allergic reaction
