CHECK that ALL ingredients bear the Nut-Free label Press the firm tofu to remove excess water (15 min) Peel and dice the red bell pepper into regular 1.5 cm cubes Soften the rice cake in a little water (3 min) Wash the raspberries carefully (cut in half if large) Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Steamer pot Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not leave tough red bell pepper skin Do not give whole raspberries to under 24 months Do not add salt: baby's immature kidneys ⚠️ NEVER serve a product that may contain hidden nuts Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: bell pepper should be melting-tender KEEP PACKAGING of sensitive products to prove nut-free Check LABELS even for 'obvious' products (e.g. spice mixes sometimes contain nut traces) Take out 30 min before for better incorporation 2
Crumble the pressed firm tofu in a large bowl Add the red bell pepper mashed into a smooth purée Fold in the softened rice cake and halved raspberries Add the binder (silken tofu) Pour in the olive oil and half of the cardamom Mix with a wooden spoon Adjust the texture (rice flour if too sticky) Shape the tartelettes with oiled hands Place in tartelette molds

Silicone tartelette molds
Do not overmix: elastic dough Do not add too much flour: shapes become too dense Do not forget to shape tightly: otherwise it crumbles Do not make tartelettes too big: max 5 cm diameter Do not leave air in the dough ⚠️ Check that utensils have not been in contact with nuts If the dough is too sticky: add 1 tsp rice flour If too dry: add 1 tsp liquid (water or adapted milk) Shape with damp hands: the shapes won't stick Use silicone tartelette molds for easy removal Vary sizes according to age For 24-36 months: bigger tartelettes Tartelette molds
