CHECK that ALL ingredients bear the Egg-Free label Cook the white beans in water (30 min) until tender Cut the cherry tomato into regular 1.5 cm cubes (remove seeds) Soak the chia seeds in water (10 min) until gel forms Peel and dice the kiwi into small cubes
Mix the flax seeds with water and let gel (10 min)
Wash and finely chop the tarragon
Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Air fryer Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not forget to remove cherry tomato seeds Do not leave kiwi seeds Do not add salt: baby's immature kidneys ⚠️ NEVER serve a product that may contain hidden eggs Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: beans should be melting-tender KEEP PACKAGING of sensitive products to prove egg-free Check LABELS even for 'obvious' products (e.g. spice mixes sometimes contain eggs) Take out 30 min before for better incorporation 2
Mash the cooked white beans in a large bowl Add the cherry tomato mashed into a smooth purée Fold in the soaked chia and diced kiwi Add the binder (flax egg) Pour in the olive oil and half of the tarragon Mix with a wooden spoon Adjust the texture (chia gel if too sticky) Shape the tartelettes with oiled hands Place in tartelette molds Large bowl Wooden spoon Fork Clean hands Silicone tartelette molds Do not overmix: elastic dough Do not add too much gel: shapes become too dense Do not forget to shape tightly: otherwise it crumbles Do not make tartelettes too big: max 5 cm diameter Do not leave air in the dough ⚠️ Check that utensils have not been in contact with eggs If the dough is too sticky: add 1 tsp chia gel If too dry: add 1 tsp liquid (water or adapted milk) Shape with damp hands: the shapes won't stick Use silicone tartelette molds for easy removal Vary sizes according to age For 24-36 months: bigger tartelettes 3
Preheat the air fryer to 180°C Lightly oil the tartelette molds Arrange the tartelettes leaving 2 cm between each Cook in the air fryer for 12 min Check cooking halfway through Remove when tartelettes are golden Let cool 3-4 min Test the temp with a finger: warm Serve immediately Air fryer basket Pastry brush Fork Tongs Timer Do not forget to preheat Do not overcrowd the basket Do not open the fryer in the first 5 min Do not overcook: becomes hard and dry Do not use too high heat Do not unmould too hot: burns Check cooking: fork comes out clean For 12-18 months: more moist cooking For 24-36 months: more golden cooking If browning too fast: lower to 160°C Test with a toothpick: should come out clean Remove when shapes come off easily 4
Prepare a fresh kiwi slice garnish Arrange the warm tartelettes on baby's plate Add small kiwi pieces around (peeled) Show how to pick up the tartelettes Serve warm Watch baby during the meal Monitor allergy signs (rash, swelling) Put leftovers in the fridge Baby plate Small bowl + suction cup Spoon Non-slip cloth Phone (emergency) Do not serve burning hot Always peel kiwi before serving Do not leave baby alone Do not put too many kiwi pieces Do not reheat several times ⚠️ NEVER add an ingredient with hidden eggs Serve warm: flavors are more developed Kiwi adds color and vitamin C For 12-18 months: cut tartelettes in half Silicone bowl with suction cup Offer 2-3 different sides Keep phone nearby in case of allergic reaction
