CHECK that ALL ingredients bear the Fish-Free label Cook the red lentils in unsalted water until very tender (15 min) Peel and dice the cucumber into regular 1.5 cm cubes Cook the polenta with a little water (5 min) Cut the pineapple into small cubes (remove any hard core) Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Steamer pot Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not leave tough cucumber skins Do not give pineapple chunks to under 24 months Do not add salt: baby's immature kidneys NEVER serve a product that may contain hidden fish Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: cucumber should be melting-tender KEEP PACKAGING of sensitive products to prove fish-free Check LABELS even for 'obvious' products (e.g. spice mixes sometimes contain fish derivatives) Take out 30 min before for better incorporation 2
Mash the cooked lentils in a large bowl Add the cucumber mashed into a smooth purée Fold in the cooked polenta and diced pineapple Add the binder (egg) Pour in the olive oil and cinnamon Mix with a wooden spoon Adjust the texture (polenta if too sticky) Shape the tartelettes with oiled hands Place in tartelette molds 3
Preheat the oven to 180°C fan Lightly oil the tartelette molds Arrange the tartelettes leaving 2 cm between each Bake in the middle of the oven for 17 min Check cooking halfway through Remove when tartelettes are golden Let cool 3-4 min Test the temp with a finger: warm Serve immediately 4

Do not overmix: elastic dough Do not add too much polenta: shapes become too dense Do not forget to shape tightly: otherwise it crumbles Do not make tartelettes too big: max 5 cm diameter Do not leave air in the dough Check that utensils have not been in contact with fish If the dough is too sticky: add 1 tsp polenta If too dry: add 1 tsp liquid (water or adapted milk) Shape with damp hands: the shapes won't stick Use silicone tartelette molds for easy removal Vary sizes according to age For 24-36 months: bigger tartelettes Tartelette molds
