CHECK that ALL ingredients bear the Sesame-Free label Cut the ground beef into small pieces (already ground) Cut the cauliflower into regular 1.5 cm florets Crumble the corn tortilla into small pieces Peel and dice the kiwi into small cubes Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Steamer pot Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not leave tough cauliflower stems Always peel kiwi to avoid choking Do not add salt: baby's immature kidneys NEVER serve a product that may contain hidden sesame Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: cauliflower should be melting-tender KEEP PACKAGING of sensitive products to prove sesame-free Check LABELS even for 'obvious' products (e.g. corn tortilla mixes often contain sesame) Take out 30 min before for better incorporation 2
Mix the ground beef in a large bowl Add the cauliflower mashed into a smooth purée Fold in the crumbled tortilla and diced kiwi Add the binder (egg) Pour in the olive oil and sweet paprika Mix with a wooden spoon Adjust the texture (corn flour if too sticky) Shape the meatballs with oiled hands Place on a tray 3
