CHECK that ALL ingredients bear the Sesame-Free label Soak and cook the chickpeas until very tender (or use canned chickpea) Cut the pumpkin into regular 1.5 cm cubes (remove skin if tough) Cook the jerusalem artichoke until tender, peel and dice Pit and chop the dates into small pieces Wash and finely chop the dill Take all ingredients out 20 min before (room temperature) Cutting board Paring knife Kitchen scale Mixing bowl Steamer pot Do NOT buy a product without reading the label Do not cut too large: choking hazard Do not leave tough pumpkin skin Always remove date pits Do not add salt: baby's immature kidneys NEVER serve a product that may contain hidden sesame Cut ALL pieces the same size for even cooking For 12-18 months: thinner pieces (1 cm) Test cooking with a fork: pumpkin should be melting-tender KEEP PACKAGING of sensitive products to prove sesame-free Check LABELS even for 'obvious' products (e.g. chickpea packs sometimes share lines with sesame) Take out 30 min before for better incorporation 2
Mash the cooked chickpeas in a large bowl Add the pumpkin mashed into a smooth purée Fold in the cooked jerusalem artichoke and chopped dates Add the binder (silken tofu) Pour in the olive oil and half of the dill Mix with a wooden spoon Adjust the texture (chickpea flour if too sticky) Shape the wraps with oiled hands Place on a tray 3
Bring a pot of unsalted water to a gentle simmer Carefully lower the wraps into the water Poach for 8-10 min (they should float when cooked) Test doneness with a fork Remove with a slotted spoon Drain on a clean cloth Let cool 3-4 min Test the temp with a finger: warm Serve immediately 4
Prepare a fresh date piece garnish Arrange the warm wraps on baby's plate Add small date pieces around (pitted) Show how to pick up the wraps Serve warm Watch baby during the meal Monitor allergy signs (rash, swelling) Put leftovers in the fridge Baby plate Small bowl + suction cup Large bowl

Do not overmix: elastic dough Do not add too much flour: shapes become too dense Do not forget to shape tightly: otherwise it crumbles Do not make wraps too big: max 6 cm diameter Do not leave air in the dough Check that utensils have not been in contact with sesame If the dough is too sticky: add 1 tsp chickpea flour If too dry: add 1 tsp liquid (water or adapted milk) Shape with damp hands: the shapes won't stick Make small flat rounds for wraps Vary sizes according to age For 24-36 months: bigger wraps Large pot
